Carrots can keep in the fridge for up to three months if properly prepared for storage. Remove any greens to prevent carrot from spoiling. Do not wash until ready to use the carrot and they should be stored away from apples, pears, potatoes or other fruits and veggies that produce ethylene gas that can change the way carrots taste. To prep remove the greens and place in a bag in the coolest part of the fridge. This will keep them for over a week. For quick snacks, wash and scrub the carrot, cut into sticks or buttons and place in glass container with some water. This way you are ready for raw snacking or steamed, boiled or roasted fresh carrots.
