Preparing Sweet Potatoes
Did you know that North Carolina sweet potatoes are available every month of the year. When selecting sweet potatoes, it is important that they are firm to the touch and no signs of mush or mold. The best way to store is in your cool pantry or frozen. Simply get in the habit when you get home, turn on the oven and pop in your sweet potato(s). You will love these baked delights. For frozen, wash, peel and boil the sweet potatoes until tender. Slice, dice or mash and sprinkle with a little bit of organic lemon juice. Let cool and then place in a freezer safe glass container and freeze. Perfect for quick nutritious side dishes.
If potatoes are on the menu, I will simply poke a few holes in the white or sweet potato and wrap it in aluminum foil before placing them in the fridge until the night they are to be cooked. From there, all that is left to do is place them in a preheated oven. Doesn’t it get any easier than that!
