Bell Peppers are loaded with Vitamin C. There are many colors and varieties. Sweet peppers contain lycopene, which is said to protect against prostate cancer. They also contain vitamin K which attracts and binds calcium to the proteins in the body. Their colors are vibrant and add flavor to dishes or taste delicious just as a snack. I love to buy peppers at the grocery store or farmers market. I always try to buy organic ones. Once home with them I rinse them and dry them. Cut peppers into strips and bite size pieces so I can snack or pop them into recipes. Amount: Fill a 6-cup glass container to use for the week. Your family size and likeness of peppers will determine if the next week you should prep more or less. Cut peppers stay fresh in an air tight container for 4-5 days.
