The carrot is easy to pack for snacks and perfect as crudité, the crunchy texture and sweet taste of carrots is super popular among adults and kids. The carrot is shipped around the country from California throughout the year, locally grown carrots are in season in the summer and fall when they are the freshest and most flavorful. It is important to choose organic and when possible buy from your local farmer’s market. The carrot has a thick, fleshy, deeply colored root, which grows underground, and feathery green leaves that emerge above ground. Growing your own is a fun project with your kids and it reminds me of that cute children’s book “The Carrot Seed”. Carrots also have other family members like parsnips, fennel caraway, cumin and dill which all have the umbrella-like flower clusters that characterize this family of plants. Carrots are an excellent source of antioxidant compounds, they are the richest vegetable source of the pro-vitamin A carotenes. Carrots’ antioxidant compounds help protect against cardiovascular disease and cancer and also promote good vision, especially night vision. So Bugs Bunny was right. Buy organic, rinse them and give them a good scrub. Leave on the peel and cut like buttons or sticks. A medium size bag is what I recommend.
