Eggs supply essential amino acids and several vitamins and minerals including vitamin A, riboflavin, folic acid, vitamin B6, vitamin B12, choline, iron, calcium, phosphorous and potassium. Eggs containing Omega 3 fatty acids are available. Only 27% of the fat in egg is saturated fat. The egg white consists primarily of water (87%) and protein (13%) and contains no cholesterol and little if any fat. The egg is a perfect food. Nothing more can be added to that. Wow the egg really is the perfect food. For Sunday Set-Up™ I like to boil a dozen eggs so I have them for snack, salads, my devils or just on a piece of whole wheat toast. Yum.
