Kale packs a powerful punch when it comes to vitamins. Kale is a leafy green vegetable with a nutrient rich phytochemical content. Abundant in calcium, lutein, iron, and Vitamin A, C, and K. Kale has seven times the beta-carotene of broccoli not to mention the much needed fiber that is lacking in the American diet. This heavy hitter will always be on the Sunday Set-Up™ list. When you buy kale it comes in a bunch. One or two bunches is best. Once you are home rinse the kale and let dry. Tear off pieces from the stem and place in a container. Keep the stems and chop into fine pieces, store in a zip lock bag in the freezer to use in soups, stir fry or salad during the week. Amount: Fill the 6-cup glass container to use for the week. Your family size and likeness of kale will determine if the next week you should prep more or less. Kale will last a week or more.
