Tomatoes

Tomatoes are loaded with lycopene which is one of the most powerful natural antioxidants, especially when cooked. Tomatoes come in many varieties and are used in so many ways. Sliced and served as a quick snack or pureed and ladled onto a bowl of whole wheat pasta. Anyway you have your tomatoes they are a super food. Keeping tomatoes on hand is a must however keep the prepping to a minimum. Tomatoes are best left on the counter out of direct sunlight. Only rinse them when you are preparing to use. The only ones that I rinse and place in the glass containers are the little baby grape ones. They are great for snacking. Leave the container on the counter so kids, adults and you always have a yummy, sweet snack ready to eat. The baby tomatoes will last in the containers for at least 4-5 days.
