A great “go to” chicken supper. *Make ahead in your crock pot, cook the rice the night before and dinner is ready in a snap.

2 cups uncooked white or brown rice, prepared according to package
1 1/2 c. finely chopped apple
1 light drizzle olive oil
1/2 c. chopped onion
1 clove garlic
2 T flour
3 tsp. curry powder
1 tsp. turmeric
1 tsp. paprika
1 tsp. salt
1 cup coconut milk or regular organic milk if you don’t have coconut
1 cup low sodium chicken broth
2 cups cubed cooked chicken
1 Tsp. tomato paste (optional, I used it in mine and loved it)


Lightly drizzle olive oil in a large saucepan. Add apples, onions and garlic. Cook over medium heat, stirring frequently, until onions are translucent, then add flour and all the spices, cook for a couple of minutes. Slowly add milk, chicken broth and tomato if you are using it. Cook, stirring periodically, until the sauce has thickened, about 15 minutes. Add chicken and heat through. Serve over rice. Serves 4.
