These are a great summer appetizer for parties or just a yummy bite on a hot day.

Bite-size Watermelon Cubes1/2 large watermelon, sliced into 1″ cubes
2 limes, zest and juice
3 Tbs. olive oil
pinch of sea salt
1/3 cup feta or crumbled goat cheese
1/4 cup mint chiffonade (very thin strips)

DIRECTIONS

Place the watermelon cubes in a large bowl and gently toss with lime zest and juice, olive oil and sea salt. Chill for one hour.
With a pairing knife, scoop a half circle out from one side of the cube to create a “bowl” for the cheese topping.
Fill the bowl with the feta and garnish with mint. Drizzle any remaining lime-juice from bowl over the cubes. Serves 8-10
