The perfect blend for a complete protein and fiber, rice and beans. This is a delicious meal in a bowl.
INGREDIENTS (click photo to enlarge)
Cooked brown or white rice
Roasted red peppers, chopped
1 can organic black beans, rinsed
1/2 cup of salsa, any kind works
Fresh cilantro, chopped
Avocado, diced
Lime wedge
Red pepper flakes
DIRECTIONS
In a bowl, add warm rice. Top with chopped red pepper. Mix together the black beans and salsa in a small/medium sauce pan until hot. Pour on top of the rice and red pepper. Top with avocado, cilantro, a big squeeze of lime and red pepper flakes.
