If you have had the Star Bucks Cranberry Bliss Bar you will know what I am talking about. Delish! Cut out the process and the cooking and try these “raw” bars. Not only are they good for you they are delicious.
INGREDIENTS (click photo to enlarge)
Sweet Cream Cheese Icing:
1 cup cashews
1/4 cup fresh organic lemon juice
1 tablespoon melted coconut oil
1/3 cup agave nectar
Orange Drizzle Topping:
3 tablespoons melted coconut oil
3 tablespoons organic orange juice
1/4 cup dried cranberries
1 teaspoon organic orange zest
For the base: Pulse the oats in your food processor until they become a rough flour. Add the dates and vanilla and process until it forms a ball. Press into the bottom of a lined small square baking pan. Set aside.
For the cream cheese icing: blend all ingredients until smooth. Spread over cake.
For the drizzle: blend the melted coconut oil and orange juice together. Sprinkle the dried cranberries and orange zest onto your cake then pour the drizzle. Let it set for a few hours in the fridge.
