If you like shrimp this is faster than fast food and will taste like you went to cooking school.

1/4 cup olive oil
4 large cloves garlic, sliced thin
1½ pounds shrimp, peeled, rinsed, and dried. I bought a package of uncooked Wild Blue Shrimp from Trader Joes. Incredible.
Salt
Pepper
Thin slice of butter
Handful of chopped fresh parsley, a little extra for garnish
1 tablespoon lemon juice
2 cups of prepared brown rice, quinoa or cous cous.

DIRECTIONS

Heat the oil in a large cast iron skillet over low heat.
Add the garlic, and stir until it is golden.
Turn up heat to medium and add the shrimp. Sprinkle with a dash of salt and pepper.
Cook for a few minutes until the shrimp is pink on one side and then turn them over. Sprinkle the parsley over the shrimp.
Continue to cook for a few minutes more until done. Total cooking time 8-10 minutes depending on shrimp size.
Stir in the lemon juice and butter, stir and cook for about 30 seconds more. Serve over warm grains and garnish with additional parsley. Beyond!
