Your pasta won’t know what hit it. This pesto is to die for.
INGREDIENTS (click photo to enlarge)
3 tightly packed cups fresh kale, rinsed and drained.
1/2 cup extra-virgin olive oil
1/2 cup toasted or raw sunflower seeds (toasted bring out a nutty flavor)
juice and zest of one lemon
1 clove garlic
1/4 cup fresh oregano or basil, lightly packed
Sea salt to taste
Place kale into the food processor, add lemon juice and zest, herbs, garlic and seeds and mix thoroughly.
Keep running processor on the slow speed and slowly add the oil. Blend well, place into the jar with tight lid or dip immediately.
