I love this fish and so do my kids and that is a feat in my house when it comes to fish.

INGREDIENTS                                       (click photo to enlarge)

1 pound Pacific cod fillet, skin removed cut into 2 1/2 inch strips, ask the fish monger to do it for you if possible.
2 Tbs. olive oil
a light sprinkle of sea salt
1/2 cup corn flakes, crushed


Heat oven to 400° F. Rub the cod with the oil and season with sea salt.
Dip the tops of the fish (not the side from which the skin has been removed) in the cornflakes and place on a parchment on a baking sheet. Bake the fish until just cooked through and opaque, about 10 minutes.
Serve immediately.
