The other day I was leaving Julia Robert’s house after a workout and took a glance at her garden. The kale was amazing and she broke off a handful that I took home. This salad I made is really one of the most delicious salads I have ever made. So easy anyone can make it. Another plus, the kale is such a sturdy green that if you have left over you can still enjoy it the next day.

INGREDIENTS                                           (click photo to enlarge)

1 bunch of kale, washed, dried and torn.
1/2 cup of dried blueberries
1/2 cup sliced almonds
1 apple diced, any color
1 pear diced, any color
1 lemon, both zest and juice
3/4 cup virgin olive oil
1/4 cup apple cider vinegar
1 Tbs. agave syrup
salt and pepper

DIRECTIONS

Rinse kale and let dry. Tear off the stem and place in salad bowl. Add berries, nuts, apple and pear. Mix gently together.
In a small bowl, whisk the lemon zest and juice with olive oil, apple cider vinegar, agave and sprinkle salt and pepper to taste.
Drizzle over salad and serve right away. So yum!
