This is one recipe I would double and freeze the extra loaves. These are so good. So homemade and delicious.

INGREDIENTS                                       (click photo to enlarge)

1 cup bread crumbs
1/2 cup ketchup
1 cup coarsely chopped onion
1/4 cup chopped fresh flat-leaf parsley
1/2 cup nonfat buttermilk (low fat milk with a tsp. of vinegar will make your buttermilk)
4 cloves minced fresh garlic
1 tablespoon Dijon mustard
1/2 teaspoon freshly ground black pepper
1/4 teaspoon sea salt
2 ounces low fat cheddar cheese, cubed
2 large eggs, lightly beaten (use only one yolk)
1 pound ground chicken, turkey or grass fed beef
Cooking spray or olive oil

DIRECTIONS

Preheat oven to 350°

Combine toasted breadcrumbs, 1/4 cup ketchup, onion, half of the parsley, and remaining ingredients except cooking spray in a bowl. Mix until combined.

Transfer the mixture to a 9 x 5″ coated loaf pan. Brush the top with remaining ketchup and sprinkle with the parsley. Bake at 350° for 45-50 minutes. Let stand for 10 minutes, and cut into slices and eat right away or save for a cold meat loaf sandwich.
