Any season this salad is perfect. Fresh cherries in the summer or frozen in the winter. Either way this is a yummy salad. Beyond easy to make. Serves 6.

Mixed Greens with Cherries and Toasted Almond Goat Cheese Balls 4 ounces Low fat cream cheese
4 ounces organic goat feta cheese (if you can’t find it, regular feta works fine)
1/2 cup finely chopped, toasted finely sliced almonds
2 tablespoons Champagne vinegar
1/4 cup extra-virgin olive oil
1/2 teaspoon kosher salt
1/2 teaspoon pepper
1 bag organic lightly packed mixed baby greens
2 cups pitted cherries, halved


With a whisk whip cream cheese and feta until smooth. With a spoon scoop balls of cheese mixture onto a plate covered with wax paper. Chill for 20 minutes.

Pour almonds into a shallow bowl, once the cheese is chilled roll cheese balls in almonds to coat and set on a clean plate. Chill until firm, about 1 hour. You can do these a day ahead as well.

Whisk vinegar, oil, salt, and pepper in a large bowl to combine. Add greens and cherries and toss to coat. Arrange salad on plates and scatter cheese balls on top.
