This pasta is super delicious and very easy to make. Everyone in my house loves it. Serves 6

Parsley Pesto Pasta 1 pound spaghetti, Gluten Free Quinoa spaghetti or rice spaghetti
sea salt for the water and for taste
1/2 cup unsalted, roasted almonds
4 cups fresh flat-leaf Italian parsley leaves, packed
3/4 cup chopped fresh chives
1 clove of fresh garlic
3/4 cup extra-virgin olive oil
3/4cup finely grated Parmesan
Freshly ground black pepper

DIRECTIONS

In a large pot of boiling salted water, add the spaghetti, stirring occasionally, until al dente. Drain and reserve 2 cups of the pasta water.
While pasta is cooking, pulse almonds in a food processor until smooth. Add parsley, chives, garlic, olive oil, and Parmesan; process until smooth. Season the pesto with sea salt and pepper. Toss pasta and pesto in a large bowl, adding pasta water by 1/4 cupfuls until creamy. Season with salt and pepper. Serves 6
