A light protein loaded pasta that is so easy and quick to make.used commercial water slides for sale Great for lunch or after a workout. A complete meal that is filling and satisfying.
INGREDIENTS (click photo to enlarge)
1 lb. fusilli or orecchiette pasta
1/2 cup jar roasted red peppers, rinsed and chopped
1 small Italian zucchini, thinly sliced and roasted
1/2 cup pitted black olives
1 cup roasted baby tomatoes, halved.
3 garlic cloves sliced and roasted.
1/4 chopped parsley
1 can oil-packed wild caught tuna
2 Tbs. extra virgin olive oil
1/4 cup shaved parm. cheese
Preheat oven to 375 degrees. Cook pasta according to directions. Reserve 1/2 cup of pasta water. In a bowl toss garlic, tomatoes and zucchini with a light drizzle of olive oil and coat. Pour onto a cookie sheet and roast for 15 minutes. While roasting combine peppers, olives, parsley, tuna and olive oil in a large bowl. Add cooked and drained pasta to the bowl and toss. Add roasted veggies and a 1/4 cup of the pasta water. Continue to toss and add cheese and last 1/4 cup of pasta water. Top with more shaved parm and serve. Makes 6 servings.
