A powerhouse meal. Great protein from the Vital Choice wild salmon and the almonds. Fresh and light with the mixed greens.

One 6 oz. piece of Salmon per person.
1 Tbs. Veri Veri Teriyaki Marinade
1 Tbs. water
Handful of mixed greens
Drizzle of olive oil
Drizzle of seasoned rice wine vinegar
small handful of sliced almonds

DIRECTIONS

Place defrosted or fresh salmon on a dish and marinate. I chose Veri Veri Teriyaki from http://www.soyvay.com/
Toss greens with oil and vinegar. Toast the almonds in a skillet for a few minutes until golden brown and remove.
Toss into salad once cooled. In the same skillet, do not rinse out, add a drizzle of olive oil and heat on a medium heat.
Place salmon into skillet and pan fry on both sides, about 5 minutes. Don’t walk away, salmon cooks fast.
Once done place the salmon on a plate. Top with the greens and enjoy immediately.
