You can’t believe how good cabbage is for you and when you add a spicy peanut butter dressing it puts this combo over the top. Serve next to a piece of grilled salmon or flank steak for a super quick and easy summer supper. This is a great salad that you can make so fast especially when you have your cabbage already prepped in your Sunday Set-Up™ containers.
INGREDIENTS (click photo to enlarge)
Chopped red cabbage, about one cup per person.
3/4 cup of natural peanut butter
1/4 cup tahini
1/4 cup coconut milk
3 TBS. fresh lime juice
3 TBS. low sodium soy sauce
1 TBS. minced fresh ginger
1 TBS. hot sauce, more if you like the heat
1 tsp. red pepper flakes
Place chopped cabbage in a bowl. You can make this for one or for many. Prep about one cup of cabbage per person.
In a medium bowl combine the rest of the ingredients. For a thicker dressing add more peanut butter. Spoon onto the cabbage and with clean hands mix together thoroughly so the cabbage is evenly coated. Store the extra dressing to use again with the cabbage or use as dressing over whole wheat noodles.
