Another delicious recipe from my friend Dana “Beverly Hills Farmgirl” Slatkin. I was at her home and she made this along with some other delicious southern dishes that were inspired by her friend and actress Sela Ward. A few tweaks from me to make the cut for Sunday Set-Up™. Enjoy

INGREDIENTS                                       (click to enlarge)

4-6 (4-ounce) filets very fresh tilapia, red snapper, sole or halibut
1 Tbs. grapeseed oil
1 lemon, cut into wedges for garnish


Place a cast iron skillet over medium high heat for 1-2 minutes until, (as Dana likes to put it, RIPPING HOT). Pat the fish dry. Sprinkle generously with the Black Magic spice mix.

Add the oil to the hot pan and swirl to coat. Carefully add the fish and sear for 1-2 minutes until blackened. Gently flip the fish with a silicone spatula and cook on the other side. If the fillets are thick, you may need to transfer them to a 350 degree oven for 5-10 minutes for finish cooking. Serve fish immediately with a lemon wedge.
