For those who like fish you will love this refreshing ridiculously simple dish. For those who don’t like fish this is the dish that could change your mind. It is light, fresh, crisp and honestly an explosion of flavor in the mouth. I have turned two non-fish eaters into Ceviche lovers.

INGREDIENTS

2 lbs of firm, fresh halibut, cut into 1/2 inch pieces, completely deboned ( you can use other firm fish I just love halibut)
1/2 cup of fresh squeezed lime juice
1/2 cup of fresh squeezed lemon juice
1/2 red onion, finely diced
1 cup of chopped fresh seeded tomatoes
1 serrano chili, seeded and chopped, or hot chili sauce. You can use either or both depending on how hot you like it.
2 teaspoons of salt
handful of chopped cilantro
Avocado cut and diced
Sunday Set-Up™ homemade tortilla chips

DIRECTIONS

In a glass bowl (do not use any metal) , place the fish, onion, tomatoes, chili or chili sauce or both, salt, cilantro. Cover with lime and lemon juice. Let sit covered in the refrigerator for an hour, then stir, making sure all of the fish gets exposed to the acidic lime and lemon juices. Let sit for several hours, giving time for the flavors to blend. What is amazing to many is that the lemon and lime juice is what cooks the fish. WOW that is so cool. Kids can use this as a science project as well. Remove from the refrigerator and add in the diced avocado. Garnish with more cilantro and serve with Sunday Set-Up™ chips. Great for lunch, dinner or an appetizer. My oldest son loves this now and helps make it. Beyond delish!!!
