Who knew cabbage made an awesome wrap. For this recipe try the savoy cabbage or red. These are delicious warm or room temp. For lunch or dinner or just after a workout, the protein, flavor and crunch will make this one of your favorites.
INGREDIENTS (click photo to enlarge)
1 cabbage, use the leaves whole. You will have extra so chop and store.
2 chicken breasts, boiled. Reserve 3 T. of the broth from the chicken.
1/2 red onion
1/4 cup tahini
3 T. barbecue sauce
1 T. chopped green chili pepper
handful of flat Italian parsley
Boil chicken in pot until cooked completely through. About 10-12 minutes. Cut through to make sure it is white. In a skillet saute onion. In a large bowl shred the chicken, add onions, parsley and pepper. Mix together. In a small bowl mix together the tahini and the barbecue sauce. Add some of the chicken broth to make it like a dressing. Pour over chicken and gently blend. Scoop into the cabbage cups and enjoy.
