Drink your greens. This soup is so easy and I love to have it ready to eat. Warm up a cup and enjoy.
INGREDIENTS (click photo to enlarge)
1 bunch of kale or use your torn kale from containers. About 3 cups.
1 bunch of flat Italian parsley, stems removed
1 medium yellow onion, quartered
3 Leeks, cut into chunks
1 cup of frozen peas
2 small red potatoes
4 cloves of garlic, whole
1 box of low sodium chicken or veggie broth
sea salt and pepper to taste
Bring all the ingredients to a boil in a large stock pot.
Once potato is tender remove from heat and begin to spoon into food processor or blender. Mix until creamy. Serve right away or store in large canning jar.
